Story behind the recipe: This dish is a go-to for every family brunch.

Description of the dish: This breakfast strata is a great, easy egg dish for any breakfast or brunch gathering. The green chilies and spicy cheese give it a little kick, but not overpowering spice. Of course you can always dial up the spice by using chorizo sausage and/or adding more chilies. It's also very tasty reheated, on which I love adding some Cholula hot sauce. The prep needs to be completed the night before to give the egg mixture time to soak into the English muffins, so plan accordingly.

This recipe makes 12 to 15 servings.

Time to prep: 30 minutes

Time to cook: 35 to 40 minutes

Ingredients:

  • 2 lbs ground sausage
  • 6 English muffins, split into halves and buttered
  • 16-oz package Mexican Velveeta cheese
  • 1 1/4 cup sour cream
  • 4-oz chopped green chiles (drained)
  • 12 eggs (beaten)

Cooking Instructions:

  1. Cook sausage thoroughly.
  2. Mix in cheese and green chiles over low heat.
  3. Mix eggs and sour cream in a separate bowl.
  4. Place buttered muffin halves face- down in a 9x13 dish.
  5. Layer half of the meat/cheese mixture, then half of the egg mixture, then the other half of the meat/cheese, followed by the rest of the egg.
  6. Cover and let sit in the refrigerator overnight.
  7. Uncover and bake 35-40 minutes at 350 degrees.
